The 'ultra-smart' Black Bull Butchery Charcuterie was opened by proprietor Glen Viller in Macleay Street, Potts Point, in July 2006. Glen Viller is an internationally experienced and world-class quality butcher, devoted to the highest

meat advisory service for his customers.

Amongst the premium butcher cuts in the Black Bull Butchery Charcuterie, you'll find ready-to-go and vacuum-sealed, mouth-watering fresh gourmet meat and poultry packages with home-made marinades and fillings, such as chicken with lemon chemoula and sweet coriander, pork with asparagus and parmesan, maroccan lamb and porcini oil lamb rumps, lamb loins filled with sun-dried tomatoes, prosciutto and shallots, or a selection of quality beef steaks marinated in truffle oil.

Glen Viller's Black Bull quality butchers shop has a particular forte in specialty meats and game meats, providing treats ranging from grain-fed beef, duck, quail, spatchcock and pheasant, to camel, buffalo, venison, and wild and farmed rabbit. 
His range of (gluten-free) sausages is also second to none, including: 
wagyu beef and thyme, lamb and mint, duck apple and cognac, pork and fennel, Italian, emu, chorizo, kangaroo, crocodile, chicken sage and pistachio, 
wild boar, organic chicken, and the list goes on!

The Black Bull Butchery is also an organic butcher, offering a broad range of prime quality organic meats, free-range products, sustainable and quality meat and meat-related products which conform to dietary needs.
